Grown along the lush southern highlands near the Guatemalan border at elevations of 1,200–1,700 meters with volcanic soils, and a warm, humid climate combine to create ideal conditions for cultivating balanced, sweet coffees. Much of this region’s coffee is shade-grown by smallholder farmers and fully washed, producing a clean and approachable cup profile.

At a medium roast, this Mexican coffee offers a smooth, comforting character with gentle complexity and it opens with notes of milk chocolate and caramel, followed by hints of toasted pecan and light brown sugar. Subtle fruit undertones—often reminiscent of red apple or mild citrus—add brightness without overpowering the sweetness.

The acidity is soft and rounded, contributing liveliness while maintaining balance. A medium body provides a silky, satisfying mouthfeel, and the finish is clean and mellow, with lingering cocoa and nutty sweetness.

This roast level enhances the region’s natural sweetness and smooth texture while preserving clarity. Versatile and easy-drinking, this medium roast performs beautifully - delivering a dependable, chocolate-forward cup with gentle brightness and warmth.
