Coffee from Sumatra (Indonesia) is renowned for its depth, earthiness, and unmistakable body - characteristics shaped in large part by its traditional wet-hulling process, locally known as Giling Basah.
Unlike fully washed coffees, wet-hulled beans are removed from their parchment layer while still high in moisture, then dried further after hulling. This method, adapted to Sumatra’s humid climate, gives the coffee its signature profile: bold, savory, and richly textured.
In the cup, expect a full, syrupy body with low, rounded acidity. Flavors often lean toward dark chocolate, molasses, and roasted nuts, layered with earthy tones reminiscent of cedar, tobacco, or fresh forest floor. Subtle herbal notes—such as bay leaf or sweet pipe tobacco—can add complexity, while hints of dried fig or black plum may appear beneath the surface. The finish is long, smooth, and slightly smoky, with a lingering bittersweet cocoa character.
Wet-hulled Sumatra coffee is especially compelling at medium to dark roast levels, where its natural intensity deepens into a velvety, brooding cup without losing balance. It performs beautifully in French press and espresso, where its weight and richness are fully expressed.
